Cinnamon Rolls

yup today was the day! the day i decided to wake up and make homemade cinnamon rolls and boy let me tell you it was one of the best choices I've  made all day. now ill admit it i was a little intimidated by them, but i was determined oh so determined . one thing i learned after making these today is that ill never and yes i mean it ill NEVER go back to store bought cinnamon rolls again,

you guys these cinnamon rolls are LIFE i mean it they are so delish! so heres the recipe for you, oh and it took me about two and a half hours from start to finish, thats with the rise time. oh and by the way im totally eating one as i write this. 

Ingredients:

Dough

  • 2 1/4 tsp active dry yeast
  • 1 cup milk warm
  • 1/2 cup granulated sugar
  • 1/3 softened unsalted butter 
  • 1 tsp salt
  • 2 eggs
  • 4 cups all-purpose flour

Filling

  • 1 cup brown sugar packed 
  • 3 tbsp cinnamon
  • 1/3 cup butter softened

Cream cheese icing

  • 6 tbsp  unsalted butter
  • 1 1/2 cups powdered sugar
  • 1/4 cup cream sugar
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt
  1. for the rolls, dissolve the yeast in the warm milk in a large bowl. Let it sit for about 5 minutes. one way to check of yeast is still good is it will start to froth up. 

  2. add sugar, butter, salt, eggs, and flour to the bowl of a mixer mix on medium speed 3 mins.

  3. pour the milk/yeast mixture in the bowl and using the dough hook, mix well. 

  4. place dough into an oiled bowl, cover and let rise in a warm place about 1 hour  until the dough has doubled in size.

  5. roll the dough out on a lightly floured surface, until it is approx 16 inches long by 12 inches wide. It should be approx 1/4 inch thick.

  6. preheat oven to 350 F degrees

  7. for filling, combine the butter or margarine, brown sugar and cinnamon in a bowl.

  8. spread the mixture evenly over the surface of the dough, roll doll carefully. 

  9. place the cut rolls in the prepared pan. cover them with a damp towel. Let them rise again for another 30 minutes until they double in size.

  10. bake for 30 minutes or until light golden brown. 

  11.  make the icing by mixing all ingredients and beat well with an electric mixer until fluffy.

  12. once rolls are done spread icing. 

and just like that you'll never go back either ! this recipe is perfect to make and freeze for those days you want a roll but don't feel like  making them again. its a yummy christmas morning treat, or a lay in your bed and watch a movie kinda treat,
